How is it possible that I’ve been sharing recipes for inexpensive dishes on this blog for over a year and I haven’t written about my favorite recipe for tuna casserole? Tuna casserole has got to be the queen of frugal dinners. I stumbled upon this recipe by Cat Cora for “Southwest tuna casserole” a few years ago. In addition to being tasty and inexpensive to make, I love this casserole because it’s made almost entirely from items I always have in my cupboards or freezer: pasta, salsa, tuna, cream of mushroom soup and frozen corn are the stars of this casserole. That means I can make this dish with absolutely zero advanced thought which suits my lifestyle perfectly.
And really, in the middle of winter what’s more comforting for dinner than a casserole covered in cheese? Yum.
