Ok. I admit it. There are probably only a handful of people on earth — and they’re surely all related to me — who will find this picture even remotely appetizing.
That’s a soft boiled egg in an egg cup with toast fingers (or toast soldiers, depending on your preference). The toast gets dipped into the egg to soak up the runny yumminess. When I was growing up, “an egg-in-an-egg-cup with toast fingers” is what my mom always used to make when one of us was sick. And, today, I’m definitely sick. I’ve been doing my best to ignore my scratchy throat and stuffed-up nose for the past few days, but this afternoon I decided to wave the white flag. The only good thing about being sick is the egg-in-an-egg-cup, which never tastes as good when I’m healthy as when I’m feeling lousy. And, now that I think about it, this particular comfort food is cheap-cheap-cheap, which also makes me feel a little bit better.
