I am not a football fan, but Mark is so we’ll undoubtedly have the Superbowl on the TV tonight. While I can’t get excited about the game, I am certainly looking forward to munching on this mango black bean salsa with tortilla chips.
I’ve always loved mango salsa, and this recipe is an amalgam from a bunch of different ones I found online.
2 cups mango, chopped into bite size pieces (we use frozen mango)
1 can black beans, drained and rinsed
3/4 cup orange pepper, chopped (red, yellow, or even green pepper is good too)
1/3 cup red onion
2 Tbsp lime juice
1/3 cup fresh cilantro, chopped
1 serrano or jalapeno pepper, chopped finely (optional)
Mix all ingredients in a bowl and refrigerate until ready to eat. This makes about 5 cups of salsa. We’re eating ours with tortilla chips, but this would also taste great alongside grilled chicken or fish, or as a condiment to tortilla soup. Yum!

The salsa was great, although I added more cilantro than the recipe above called for, and I also seasoned it with a little salt. I’ll probably add corn next time. Oh, and the football team Mark was rooting for won too which was nice.
